Soave Classico Carniga

Soave Classico Carniga is a blend of 80% Garganega grape and 20% Trebbiano di Soave grape. The average annual production is 6000 bottles at the Carniga Vineyard, which is located 100 to 150 meters above sea level and faces west and south-west. The soil at this vineyard is clay-like, primarily porous limestone. The vine training system is Guyot short espalier. The grapes are harvested in the second half of October, with the fruit slightly over-ripened. The harvest is done manually into 15 kilogram boxes, followed by selection of grapes pre-destemming. The grapes are then destemmed and subjected to a cold maceration to create the must, and 12 hours of soft pressing and oxygenation of the decanted must. Fermentation occurs in temperature-controlled stainless steel tanks and permanence ser lie for about 12 months. Finally, the wine is aged in the bottle for another 12 months.

Wine descriptions: rich pale amber color, intense nose with a floral character that finishes with a sweet sensation of fruit and acacia honey. Warm and complex taste with harmonic and sweet finish. Food parings: hors d'oeuvres, soups, seafood and shellfish, white meat, and aged cheese
